Un cracker diverso...

Tra un lavoro a maglia e l’altro mi concedo il lusso di inventare una ricetta in cucina. Ecco i miei “crackers ai 5 non cereali”. Non semplicemente senza glutine, ma anche senza alcun tipo di cereale – e sono ugualmente molto buoni. I "non cereali" che ho scelto sono semi molto diversi tra loro, ma ugualmente ricchi di elementi nutritivi importanti, come potassio, acidi grassi, magnesio, ecc.

Ingredienti: 100g di farina di castagne, 100g di mandorle pelate, 100g di semi di girasole, 50g di semi di sesamo, 50g di semi di lino, 1 cucchiaino di lievito istantaneo, 1/2 cucchiaino di sale marino, 50g olio evo, 1 uovo, acqua q.b.

Procedimento: riduci in farina i semi. A tale scopo è utilissimo un macinacaffé elettrico: bastano pochi impulsi per ottenere subito un ottimo risultato.
Mescola tutti gli ingredienti secchi in una grande ciotola; a parte sbatti l’uovo con l’olio, poi uniscilo al resto ed infine aggiungi poca acqua per rendere il composto manipolabile (tende ad essere appiccicaticcio, ma non importa).
Versa il composto su un foglio di carta-forno precedentemente bagnato e strizzato, largo quando la placca del forno.
Prendi un altro pezzo di carta-forno della stessa grandezza e stendilo sull’impasto che schiaccerai delicatamente con un matterello.
Alla fine capovolgi e togli la carta che, essendo bagnata e compressa si toglierà facilmente.
Con un coltello incidi delicatamente (disegna, non tagliare) la forma dei crackers ed inforna – in forno già scaldato – a 170 gradi per 20 minuti circa.
Sforna, lascia freddare, taglia seguendo le incisioni e gusta.

Between one knitting project and the other I give myself the luxury of inventing a food recipe.
This time it is "5 no-cereals crackers": not only gluten-free, but also without any kind of cereal - and they are also very good!

Ingredients:
100g chestnut flour, 100g almonds, 100g sunflower seeds, 50g sesame seeds, 50g flax seed, 1 teaspoon baking powder, 1/2 teaspoon sea salt, 50g extra virgin olive oil, 1 egg, water as needed.

Reduce the seeds into flour. To do so it is a useful an electric grinder: you need a few pulses to get a great result.
Mix all dry ingredients in a large bowl, whisk the egg apart with the oil, then merge it with the rest, and finally add a little water to make the mixture consistent (tends to be sticky, no matter).
Pour the mixture on a sheet of baking paper (previously wet then wrung out), as wide as the oven plate.
Take another piece of baking paper the same size and lay it on the dough, then gently crush with a rolling pin.
Turn over and remove the paper - being wet and compressed it takes off easily.
Use a knife to carve gently (draw, do not cut) the form of crackers and bake - in pre-heated oven - 170 C for 20 minutes.
When cool, cut along the incisions and serve.
